Breakfast Weeks! November 1-16, 2019

It’s the 7th edition of the Cool Kids Cooking Club — a “virtual” club where kids and their parents cook the same dishes the same weeks as kids all across the country! And we are making BREAKFAST!

Our 3 Breakfast Dishes are:

  1. Sheet Pan Pancakes
  2.  Hash Yams
  3.  Oven Omelettes

You can make all three for one meal, or spread them out throughout the firstof the month — whatever works for you and your family! Just try to make all three within the weeks of November 1-16 , 2019 (and please post about them in our Facebook group!)

Sheet Pan Pancakes
This ultra-fast way to make pancakes for a crowd is both easy and delicious!

  1. Preheat the oven to 425F
  2. Combine the flour, baking powder, sugar, and salt in a large bowl.
  3. Add the milk, eggs, and melted butter and mix until there is no more flour chunks, but don't overmix.
  4. Grease a half-sheet cookie sheet (that has sides on it!) with cooking spray or butter and pour the batter into the pan. Use a spatula to spread evenly around the pan
  5. Distribute the strawberries and blueberries equally across the pan, using your finger to gently push them into the batter.
  6. Pop into the oven and let bake for about 15 minutes, or until golden brown and an inserted knife comes out clean. Serve like pancakes with whipped cream and syrup!

Hash Yams
A healthier alternative to regular hash-browns!

  1. Peel your sweet potato and then shred it. Crack in an egg and add salt and pepper to taste. One sweet potato feeds around 2-3 people as a side, so add as many potatoes/eggs as needed!
  2. Heat a frying pan over medium high heats and grease the pan. You can either scoop dollops of the potato mixture into flat piles on the pan and flip individually, or just pour them all our into the pan and flip/stir until done.
  3. Make sure all the egg is cooked and potatoes have browned. Serve as a side with breakfast!

Oven Omelettes
Easy eggs for the whole family!

  1. Preheat oven to 350F
  2. Crack the eggs into a large bowl and whisk with the milk and salt/pepper.
  3. Cut the lunch meat into thin strips. You can also substitute the ham for leftover ham cubes, bacon crumbles, sausage, or omit the meat entirely.
  4. Add in the rest of the ingredients into the eggs and stir well.
  5. Grease an 8x8 or 9x9 pan and pour the mixture into the pan. Bake at 350F for 45-55 minutues or until the middle doesn't jiggle when shaken.
  6. Eat immediately, or cut into squares and refrigerate as a meal-prepped breakfast!

I hope you are showing your kids our   Facebook Group! One of the main aspects of the club is connecting with other kids. My children love looking at the pics and videos of your kids making and eating the same foods they are. It is a highlight for sure!
