Rainbow Cake

I like any excuse to party.

St. Patrick’s Day is one of those days of the year that I have traditions and the only real reason is that I want a party and to make delicious food.  I am not Irish (well, I have one ancestor named Margaret Sullivan who was born in Ireland so I guess I am kinda Irish) but I still want to celebrate.

Every year I make Corned Beef, Potatoes, Irish Soda Bread, Cabbage Salad, and Rainbow Cake.  This year the Irish Soda Bread got burnt on the outside and raw in the middle so we are NOT on speaking terms.

But the Rainbow Cake turned out pretty good!  Because I was trying to cut back on dishes, I didn’t use piping bags for each of the colors like I should have, so the lines of the rainbow aren’t crisp.  But here is a pic of one I made a few years ago with much better defined lines:

As you can see though, the colors aren’t as bright in this cake because I used regular food color and not Gel colors.  I really recommend using Gel because it makes the color pop so well.  I’ve had trouble finding Gel Colors in stores before, so here is an Amazon link if you’re looking for it.

  1. Make the White Cake Mix to the instructions on the Box
  2. Separate the prepared Mix into 7 bowls. The colors of the rainbow can be remembered by ROY G BIV -- Red, Orange, Yellow, Green, Blue, Indigo, Violet. Make more of the earlier colors and less of the later colors. I used Gel colors for a brighter pop!
  3. Start with Red and put the colors into a greased Bundt pan one at a time around the circle. If you use piping bags the lines will come out crisper.
  4. Bake per Box instructions.
  5. Once totally cooled, remove the cake from the Bundt pan and cut in half. For each half, place a dollop of icing on each end and stand up onto a plate. Cover the cake in icing as desired.
  6. I put marshmallows around the bottom once, and I put skittles in the middle once. Decorate however you like!

    I am Irish and yet I do not care for Irish Cuisine so I made some pork-lol. But we celebrated in small ways

      I don’t like cooked cabbage so that’s why I make a salad with cabbage in it :). Not all Irish food is great
