September 22-28th, 2019 — Luck of the Irish

Top o’ the mornin’ to ya and welcome to the fourth week of the Cool Kids Cooking Club — a “virtual” club where kids and their parents cook the same dishes the same week as kids all across the country!

You can make all three for one meal, or spread them out throughout the week — whatever works for you and your family! Just try to make all three within the week of September 22-28, 2019 (and please post about them in our Facebook group!)

Sweet Glazed Corned Beef
This is the recipe my mom used to make -- but now in half the time!

  1. Open your Corned Beef package over the Instant Pot inner pot and place the meat in the bottom along with any included seasoning packets (ya know, open the seasoning packet and dump it in 🙂 ). Pour water into the pot to cover the meat (but don't go over the Max Fill line!). Set Pressure Cook or Manual setting to 1 hour 15 minutes and seal the vent.
  2. If you don't have an Instant Pot -- no worries! Follow the package instructions for the Corned Beef and boil it for as long as it says to. You can jump back in on the next step.
  3. Once the cook time is up, allow the Instant Pot to naturally release for a little while (don't vent immediately). Preheat your oven to 400F and get a baking dish out that can fit your Corned Beef.
  4. Spray the baking dish with cooking spray and release the remaining steam from the Instant Pot and carefully move the meat from the Instant Pot to your baking dish -- OR if you were boiling your meat on the stove top, take your meat out of that pot.
  5. Mix together your brown sugar, mustard, and honey into a paste. Smear the paste all over the top of the meat. Bake in the oven for 15-20 minutes or until browned and glazed. Serve immediately!

Irish Soda Bread
Super simple loaf of bread that requires no yeast and no rising time!

Instructions
  1. Preheat oven to 340F and prepare a baking sheet with parchment paper.
  2. In a stand mixer, mix flour, sugar, baking soda, baking powder, salt and margarine. Add the buttermilk and egg.
  3. Change your paddle attachment out for a dough hook and allow the dough to knead on low speed for 4 minutes.
  4. Plop the dough out into your hands and form into a ball. Lay the ball in the middle of the baking sheet and flatten slightly. Use a sharp knife to cut a deep X through the middle of the dough. Mix your melted butter and buttermilk and pour or brush a little bit over the dough. Sprinkle with a bit of sugar all over and pop in the oven.
  5. Set your timer for 50 minutes, and each 10 minutes open the oven and brush more butter/buttermilk onto the loaf and sprinkle with sugar. It is done when an inserted knife comes out clean and the top is golden brown.

Irish Apple Cake
Easy to make and delicious to eat -- serve with whipped cream or ice cream!

  1. Preheat your oven to 375F and prep a springform pan -- either grease it thoroughly or slap a piece of parchment paper in there like I did 🙂 .
  2. Mix the flour, baking powder, salt, and spices in a very large bowl. Grab your cold butter and using a knife or your fingers) break it into little pieces and drop them into the flour mixture. Use a butter knife or a pastry cutter to break the butter and flour into a little pebble-like texture. Mix in the sugar.
  3. Peel and slice your apples. If you have access to an apple corer/peeler/slicer -- now would be the time to bust that baby out!! I did that and then used a knife to cut the sliced apple into quarters. If you do not have one, you can use a peeler and a knife and cut the apple into uniform slices or dices.
  4. Mix the apples into the flour mixture.
  5. In another bowl, beat the eggs and milk together and then pour that into the apple/flour bowl. Mix until all is combined.
  6. Dump that into your springform pan and flatten the top. Sprinkle sugar all over the top.
  7. Bake for 45-50 minutes. Serve warm with whipped cream or ice cream!

My tip for the week is:

If you don’t have an Instant Pot — you need to get one right now.

I seriously use mine ALL THE TIME and it is so great. They aren’t that expensive anymore, and Black Friday is coming up soon and you know they are going to have crazy prices on that thing. If you don’t have one for the corned beef this week, either just follow the boiling instructions, or borrow an Instant Pot from a friend! Try it and see if you like it!

I hope you are showing your kids our Facebook Group! One of the main aspects of the club is connecting with other kids. My children love looking at the pics and videos of your kids making and eating the same foods they are. It is a highlight for sure!

If you are newly joining us and want to purchase badges, I take orders on a monthly basis. So please wait until the end of September when I make the October order, and let me know if you want the September badges as well. Badges are $3 each per week per child and I order them 1 month at a time ($12 per child per month). I buy the badges online in bulk and am selling them at cost. I will personally mail them to your home!

Badges are totally optional and not necessary to participate in the club — but I’ll tell ya — my kids are TOTALLY motivated to help cook and eat the food when they know they are receiving a badge! It’s the best! The badges get sewn onto the child’s personal apron and are a reminder of the awesome achievement they made; of helping cook and trying new foods!
